We have undergone the procedures necessary to obtain certification of the traceability of our culatello with pork rind's breed lines (UNI 10939), which, together with our rigorous internal system of breed traceability, allows us to offer the maximum quality guarantee of our products.

We specialize in the production of culatelli with pork rind, Fiocco di Prosciutto Ham and Felino salami.

Fiocco ham   Our traditional production methods attend to the finest detail.
We start with a selection of the best ham from among Italian born and raised pigs, weighing between 15 to 17 kg.
The ham then passes through a rigorous selection process in which any problems that may emerge in successive phases of production are eliminated. The meat then goes through the salting phase and is followed by the curing phase, which takes place in a specially acclimatized room.
